You will need However many pork chops you will be prepraing but how about 4 med thickness centercut pork chops with or w/o bone. 1 tbs minced or packaged in tube basil 1 tbs minced or packaged in tube garlic 1 tsp pepper 1/2 tsp seasoned salt 2 russet potatoes or 4 red potatoes or yukon gold 1 yello onion 1/2 red bell pepper 1/4 cup olive oil (extra virgin) 9"X11" Pyrex* baking pan large skillet on cookstove at medium-high heat Ok so here it goes, preheat oven to 350 F* Put skillet on burner to heat it up. (when you add olive oil, if it smokes turn down heat) Pull out a Pyrex* baking pan 9"X11" will work fine and pour some olive oil in it and work it into the pan with a paper towel to coat the pan. Take out the pork chops and rinse them, dry them, coat them all in olive oil, shake the pepper and salt, on them, then add garlic and basil. and using your hands give em a good massage to work in the herbs and spices, then brown the chops in a hot skillet with a little olive oil, not to fully cook the chops but to sear them, you will know when they are ready because they will be golden brown on top and bottom and pink on the sides. Slice your potatoes into cubes about 1 inch, and slice your onion into large 1/2 inch wide strips (cut onion in half, turn it and cut to have four sections, then cut 1/4 inch slices to make nice pieces.) slice bell pepper this way too. Then place pork chops in pan leaving a gap between them all, this size pan shoul fit 6 chops. Add potatoes, onions, and peppers. Add enough hot water so that it rises up to the 1/2 way mark of the chops (so theres a little pond of water in the pan. Cover with foil, and cut a couple breather holes in the foil. Put in oven and bake for about 45 minutes, or until meat thermometer says there done. You Sear the chops for flavor, and add water to pyrex pan to steam the chops so that they are really tender. When done serve with you favorite sides and enjoy.
