I was wondering all you cooks why is it when you bite an onion its kinda hot and a bit bitter but when you cook it its kinda sweet and delicious just wondering

Gosh... I had a bad memory! I graduated from Culinary Art School and they explain about onion whose you post the question. I will have to look it up again and get back with you. I LOVE culinary stuff. Often I miss being professional chef. (sighing...)

Due to changes in PH, and molecules. When you cook anything you are modifying the molecules. Heat causes the onion to release it's sugars, converting to glucose or sucrose, cant remember which one. It's kind of fun to do this, but take a good white onion, rinse with water, wrap it in foil, and throw it on the BBQ with your meats, about 20 mins later, take it off unwrap it, let it coll a little and take a bit of it, it will be sweet like an apple and have a great aroma.

Vidalias are always sweet even before you cook them, you ever dig up some of those wild onions that grow everywhere outside? If you wanna smell something that stinks, dig those up. You cant get that stink to wash off of your hands, I remember my dad telling me that he would eat those with cornbread when he was a kid lol.

I love em, but even better when making onion rings I use Miller beer for the batter instead of water - 70/30 rice & baking flour. The rice flour makes em crispy Deep fried in Peanut oil at 375^

onion rings..... ohhhh sooo delicious. Nobody besides my dad actually like them. My mom and sister like the breading, but thats it. They get rid of the best part!!!!!

yeah... I think I would prefer to eat hawk rather than goose... goose got too many fats and had too much mercury in the body. Hawk... lean meat that eat from another lean meat! YUMMY! So... NightHawk.. when do you wanna to meet?
